Bagel Breakfast with Vegan Cream Cheese

My baby girl and I wandered into the kitchen this morning and it took all of 3 minutes for me to decided that what I wanted to taste this morning was an everything bagel. My all time favorite cream cheese flavor used to be anything sweet (lol), although I do enjoy a savory garlic and chive spread just as much. 
Breakfast doesn't always have to be a long and drawn out process. In fact, any meal can be simple and satisfying. I also try to be diligent about eating fruit with each meal. It's where many of the vitamins that we need daily can be found. Without further delay, this is how I prepared breakfast this morning.

  • Dave's Killer Everything Bagel
  • 1 cup raw cashews
  • 1/2 - 1 cup berries (fresh or frozen)
  • 2 Tablespoons lemon juice
  • 1 teaspoon pink himalayan salt
  • 5-10 drops liquid stevia (or any other natural sweetener)
  • 1 -2 Tablespoons chia seeds (optional)
  • 2 Tablespoons flax seeds (optional)
  • 1/4 cup water
  • almond milk


  1. Soak cashews over night or for at least 30 minutes.
  2. Pour cashews into a high speed blender and add water, lemon juice, berries, pink himalayan salt, and liquid stevia.
  3. Pulse until well chopped and then slowly add almond milk 2 Tablespoons at a time until texture is smooth.
  4. For thicker texture and added omega vitamins, add chia seeds and flax seeds.
  5. Blend on low until texture is smooth.
  6. Jar and refrigerate for at least 30 minutes to 1 hour.
  7. Spread onto bagel, add a side of sliced nectarines and plant-based sausage, and enjoy!
