Beyond Sausage Toppings

Today we had decided to take the kids on another late afternoon bike ride. We were having fantastic weather and thought that we should explore a new trail. The green trees, grass, flowers, and streams were so comforting. The laughter of the children as we glided up and down hills was refreshing, making me feel like a human being again.

After riding about 4 miles towing two toddlers, you eventually feel tired, thirsty, and/or hungry. I am the lead chef in our house, so everyone is always looking at me for their next meal. So, tonight I had found a way to satisfy our hungry stomachs while not exerting too much more energy, as I was just as tired as everyone else. I opened up my refrigerator and found the answer. Eureka!

Peppers & Onions

  • unrefined grape seed oil
  • sliced red (purple) onion
  • sliced bell peppers

Pickled Cabbage

  • purple cabbage
  • minced garlic cloves
  • pink himalayan salt
  • black pepper
  • apple cider vinegar

Meatless Chili

  • chopped red (purple) onion
  • chopped bell pepper
  • minced garlic cloves
  • organic vegetable broth
  • red kidney beans
  • pink himalayan salt
  • black pepper
  • chili powder
  • basil
  • thyme
  • salt free chicken seasoning
  • curry powder
  • tomato sauce
  • VioLife Vegan Cheddar Cheese
  1. Cook Beyond Sausages to preferred texture. Air fryer, stove top, oven, or microwave all work fine.

Peppers & Onions

  1. Heat skillet over medium heat and add unrefined oil.
  2. Add sliced onions and pepper.
  3. Sautee until onions start to caramelize and peppers begin to soften.
  4. Remove from pan. Place Beyond Sausage on a roll and top with peppers and onions.

Pickled Cabbage

  1. In a skillet over medium heat, add chopped purple cabbage.
  2. Add minced garlic, pink himalayan salt, and black pepper. Sautee for 2-3 minutes or until cabbage begins to soften.
  3. Add apple cider vinegar and continue cooking for 2-3 minutes.
  4. Remove from pan. Place Beyond Sausage on a roll and top with pickled cabbage.

Meatless Chili

  1. In a medium sauce pan over medium heat, add chopped onion, chopped bell peppers, and minced garlic. Cook down for 3 minutes.
  2. Add 1-1 1/2 cups of vegetable broth and stir.
  3. Add red kidney beans, pink himalayan salt, black pepper, chili powder, basil, thyme, salt free chicken seasoning, and curry. Stir and cook for 3 minutes.
  4. Add tomato sauce. Stir and reduce heat.
  5. Place Beyond Sausage in a roll. Top with VioLife Vegan Cheddar Cheese and meatless chili.

**Be creative with how you top your sausages. You could add ketchup, mustard, vegan mayo, bbq sauce, or any of your favorite toppings.**
