Walnut and Veggie Pasta Alfredo

Many of us plant-based eaters like to enjoy delicious food items like Beyond meats and vegan cheeses. Those things taste great, but they are still processed foods that should be enjoyed in moderation (if at all according to your preference). One way to add some much needed protein to your meal and give yourself the satisfying reminder of a meaty texture is walnut meat. It's definitely not meat, but tastes pretty good and is packed with nutrition. Here's another creative experimental dish of mine that includes walnut meat and some other delicious ingredients.

Ingredients:

Vegetables

  • 365 mixed vegetables
  • chopped yellow onion
  • chopped broccoli rabe
  • chopped celery
  • organic vegetable broth
  • Himalayan pink salt
  • black pepper
  • oregano
  • curry powder
  • cumin

Walnut Meat

Alfredo Pasta

Instructions:

  1. Over medium/medium-high heat sauté chopped onions, chopped broccoli rabe, chopped celery, and 1/2 cup organic vegetable broth for about 3 minutes.
  2. Add 365 mixed vegetables (Mine were frozen), pink Himalayan salt, black pepper, oregano, curry powder, and cumin. Mix well and cook until all vegetables begin to soften.
  3. Place dry walnut into a clean and dry food processor with the Siete taco seasoning and a couple of pinched of pink Himalayan salt. Process until walnuts resemble ground beef. Taste and adjust seasoning as needed.
  4. Boil Andean dream noodled for about 8-10 minutes (with a pinch of salt in the water). Strain noodles and add Primal Kitchen no dairy Alfredo sauce, Himalayan pink salt, and black pepper. Mix well.
  5. In a personal sized bowl add Alfredo pasta. Top the pasta with the cooked vegetables. Then add some walnut meat on top of that and enjoy!
